With Friday marking the official start of the Christmas holiday, we are going to load up with several amazing recipes to be served to your friends and family. Today we will be looking at eggnog, the traditional, creamy – and often boozy – winter punch. This recipe will have you drinking the perfect eggnog in under 30 minutes. So, get your pot ready and keep reading to learn how to make the perfect eggnog.
Ingredients
- 6 large egg yolks
- 1/2 cup sugar
- 2 cups milk
- 2 teaspoons of Bakeroo Pumpkin Pie Spice Mix
- 1 cup heavy cream
- 1/2 teaspoon vanilla extract
- 3 tablespoons bourbon, rum, or Irish cream
- 4 egg whites, optional
Step 1
Separate the yolks from the whites and place them in a large bowl. Whisk the yolks while slowly adding half a cup of sugar. Once it has a lighter colour and all the sugar’s been incorporated, beat it until the mixture is fluffy.
Step 2
Place a pot with 2 cups of milk on medium heat. Add a teaspoon of Bakeroo Pumpkin Pie Spice Mix and slowly heat the mixture until it is steamy (it shouldn’t boil).
Step 3
Pour half of the milk into a bowl or measuring cup. Temper the egg mixture by slowly adding the milk to the egg bowl while whisking (this is important to stop the yolks from curdling). Once everything is mixed, pour the mixture back into the pot.
Step 4
Let the eggnog cook on medium heat while stirring frequently. Once it has thickened slightly, take the pot off the heat. Do not let the eggnog boil as it will curdle.
Step 5
Add the cream to the mixture and stir thoroughly. Strain the mixture through a mesh strainer into a container and let it chill for about an hour. Once chilled, add half a teaspoon of spice mix, vanilla, and three tablespoons of your desired liquor. Stir the mixture again and serve.
