This quick, wonderful pasta recipe can be served hot or cold. It is a great way to combine fresh ingredients into an easy, delicious meal. When hot the mozzarella creates little pockets of cheese akin to those in a Neopolitan pizza. What if I want a Pesto Caprese Pasta Salad? You can achieve a Caprese salad-type dish by letting the pasta cool down before adding the other ingredients. You will love it even more with our Banza chickpea pasta. Ingredients
- Banza Rotini Pasta
- Pesto
- Cherry Tomatoes
- Basil
- Mozzarella
- Black Pepper (optional)
Step 1
To a boiling pot add a tbsp of salt and add the pasta for 7-8 minutes. Slice your cherry tomatoes in half. Chop the basil, and mozzarella into small pieces and keep them aside.
Step 2
Remove the pasta from the heat once it’s done, and strain it. To a pan, add a tsp of oil and some black pepper on high heat. Once it’s hot, fry the chopped cherry tomatoes cut side down. You can skip this step if you are making a Pesto Caprese Pasta Salad. Instead, let all the ingredients cool down for at least 20 minutes in the fridge.
Step 3
In a bowl, introduce all the ingredients except the basil leaves. Add a few tablespoons of pesto and stir. Once combined, plate and enjoy!
